Environmentally Friendly Restaurants

Green business has recently received tremendous publicity.  The ABA Business Law Section has devoted an issue to Green Construction.  Kleiner Perkins Caufield & Byers, one of the nation’s most prestigious venture capital firms, has hired Al Gore (see profile) as it and dozens of other venture firms expand into so-called “clean-tech” investments worldwide. Maybe it is somewhat of a craze, but with heightened concern for global warming on the rise, the trend appears to have some significant staying power.

We have had the good fortune to assist the 1 Smart Duck Management Group, a Chelsea-based company that utilizes solar and wind energy and biometric technologies to create environmentally-friendly restaurants. Inverted canopies catch solar rays for energy and rain water for irrigation, and wind turbine screws stand at flagpole height. The car lanes possess devices to plug into vehicles and convert carbon monoxide emissions to clean air and energy.

Howard Cannon is the author of “The Complete Idiot’s Guide to Starting Your Own Restaurant” and founder of 1 Smart Duck. He is passionate about the environment, restaurants and making money.  At first blush, some might believe these three concepts do not fit together.  However, Cannon has twenty years of experience helping restaurants with design, strategy and operations as a consultant, and he understands how to make money in the restaurant business.  By adding a focus on the environment, Cannon hopes to be at the forefront of a coming trend.

I recently listened to a discussion about the environment between an environmentalist and a business person who was skeptical of global warming.  Curiously, the environmentalist took the following position: I may not be able to convince you that global warming is real; however, if you examine countries and companies that have focused on sustainable development, you will see that they are doing exceptionally well.
